For a lot of people, summer break entails vacations. Every year I get to travel to some unique places, but I’ve only ever been on a plane one time. Growing up, my parents always opted for road trips rather than plane rides and I’m so glad they did. I’ve driven to places like Arizona, Florida, and even Canada. The journey becomes a part of the trip rather than just anticipating the destination.

I named these potatoes after my mom because as far as I know, she practically invented them. She makes this dish for barbeques and potlucks and it’s always my favorite thing on the table, I just can’t get enough! When I asked her for the recipe, she told me that she just kind of throws things together so I tried to do an accurate measuring of each ingredient, but feel free to have fun with this recipe! Ingredients: 6-8 medium potatoes 1 stick butter 1 cup cream Salt, pepper, garlic salt, or other seasoning to taste 1 cup shredded cheese of your choice Instructions: Preheat the oven to 400 and line a 9x13 pan with foil.

Either way, those long summer days can begin to get boring and sluggish. There’s not exactly a lot of bodies of water around the Seminole area, but there are still plenty of ways you can have a splash.
